If you don't believe in a bread-and-butter course, it's probably best you read no further. Bread and butter enthusiasts, it's my privilege to share with you the fruits of my labour (and my 7.0 cholesterol reading) today. My finding? Not all restaurant butter is created equal — nor bread for that matter but that's a separate article entirely. Restaurant butter is actually a scene and I'm here to prove it. Wildflower Butter | Attenzione! 

Whilst we don't recommend the act, this butter is so good you'll likely start licking it straight off the knife. Paired with chewy fougasse, Attenzione!'s butter is whipped which balances the delightfully herbaceous infusion of wildflowers. What we love most about this combo is the fact that even the texture of the butter has been considered — perfect for slathering.

Smoked Butter | Nico 

The smoking of foods is a delicate art. You don't want to end up with a small campfire in your mouth, but you also don't want to be reeled in with an evocative description only to receive bog-standard butter in a fancy dish. Nico gets the ratio just right and it melts perfectly into their fresh-baked focaccia.

Bread and Butter Service | Tilda 

House Made Hospitality's latest opening Tilda, has a full bread and butter service and it's something we're hoping to see more of. At $39 (recommended to be shared between 2-4) it's a bit of an investment but if you're not investing in bread and butter then what are you investing in? You'll be served pull-apart saltbush focaccia alongside softened butter dotted with mountain pepper and chives. As if that wasn't enough, honey and seared Jersey cheese and whipped macadamia are further additions.

Fermented Honey Butter | White Horse 

Butter and honey are two of life's greatest pleasures so it's little wonder that when combined, cult status is achieved. This beautiful mound of goodness is indicative of what's to come at White Horse - a meal you won't be forgetting anytime soon. That it comes shaped like a miniature beehive and drizzled in the good stuff is proof that the bread and butter at White Horse isn't just a side — it's a dish.

Garlic Seaweed Butter | Itō 

In the wise words of Jack Johnson, it's always better when we're together. This doesn't just count for us and butter but for Itō's shio kombu bread and garlic seaweed butter. We're not sure who the real champion is but we're not ones to separate a match made in heaven.

Classic Salted Butter | Fred's

Now, Fred's isn't the only restaurant in Sydney to have salted butter on the menu, but as the saying goes, not all salted butter is equal. This stuff is house whipped which we very much appreciate.
