Char Kway Teow - Lee Ho Fook Recipe

Celebrating 10 years of being one of Melbourne's most quintessential diners, Lee Ho Fook's new style Chinese menu takes you on a culinary journey, with the use of both traditional and modern techniques. Chef Victor Liong's beef char kway teow is a nice play on a Cantonese classic, and a favourite at Lee Ho Fook and Make-Out Meals. Enjoy the slippery textures, silky beef and garlicky vegetal crunch of this crowd-pleasing dish. The sauce works well in any noodle or meat stir-fry and keeps really well too.

Char Kway Teow - Lee Ho Fook Recipe

What's Needed:

Wok or frying pan, cooking oil, knife and chopping board

What's Provided:

Rump steak, beef marinade, char kway teow sauce, garlic cloves, bean shoots, kway teow noodles, sesame seeds and Chinese broccoli

Step 1. Marinade the Beef

Slice the beef into thin strips and place in a bowl with the marinade - mix well and set aside.

Victor Liong's Chef Tip: Marinade the beef overnight in the fridge if possible to achieve a deeper and more intense flavour.

Step 2. Prepare the Ingredients

Slice the garlic cloves into thin slices.

Slice the root off the Chinese broccoli, then chop the remaining part into thirds.

In a dry pan or wok over low heat, gently toast the sesame seeds for 30 seconds until lightly golden.

Step 3. Cook the Sauce

Heat a wok or large pan over high heat, then drizzle a generous amount of oil. Add the marinated beef slices and fry for 1-2 minutes until seared and well-cooked, then remove the pieces and set aside.

Quickly wipe the pan clean with some paper towel, then drizzle some more oil. Add the fresh noodles, lightly separating them with your hands as you drop them in.

Continuously toss it in the oil for 2-3 minutes - they should begin to further separate and soften in this time and begin to lightly char.

Next, add the bean shoots and Chinese broccoli and toss again until the bean shoots have settled beneath the noodles at the bottom of the pan. The steam of the bean shoots will help soften the noodles further.

Next, add the sliced beef back in along with the garlic and char kway teow sauce. Stir until the chives have wilted and the noodles have absorbed the sauce and become dark and glossy.

Step 4. Serve & Enjoy

Divide the noodles between bowls and garnish with the toasted sesame seeds. Tuck in!
