Armed with neither culinary experience nor financial backing, Tuoi dared to introduce Vietnamese cuisine to the locals of the Barossa Valley. Opening with a mismatched ensemble of second-hand furniture and an enthusiastic team, fermentAsian evolved into a culinary miracle. Tuoi's dishes, shaped by simplicity and purity, echo her native Phú Thọ roots, balancing sweetness and acidity. Her determination has been turning fresh, local ingredients into masterpieces, and her determination has been rewarded, claiming the 'Chef of the Year' award in the 2012 Advertiser Food Awards. We love to see it!
