From the prawn cocktail with a twist to the beautifully aromatic whole baked snapper with chilli, garlic and spring onions, your dinner party guests will be impressed.
Prawn Cocktail with a Twist: Ingredients
Prawn Cocktail:
- ¼ ripe rockmelon, peeled and thinly sliced on a mandolin
- Juice and finely grated rind of 1 lime, plus wedges to serve
- 2 tsp extra-virgin olive oil
- ¼ iceberg lettuce, cut into 6 wedges
- 18 cooked prawns, peeled, deveined, tails intact
- Poppy seeds and torn mint, to serve
Cocktail Dressing:
- 1 tbsp crème fraîche
- 1 tsp Worcestershire sauce
- 150 gm (½ cup) mayonnaise
- 1 tsp finely grated horseradish
- Tabasco, to taste
- 1 tbsp tomato ketchup
- 1 tsp lime juice
Prawn Cocktail with a Twist: Method
- Whisk together ingredients for cocktail dressing
- Combine rockmelon with lime juice & rind, season and refrigerate for 2 hours, then add olive oil and toss.
- Present lettuce and melon in each bowl, top with prawns, drizzle with dressing, and sprinkle with poppy seeds and mint. Serve with lime wedges.
Whole Baked Snapper with Chilli, Garlic & Spring Onions: Ingredients
- 1 snapper medium
- 1 red chilli
- 3 cloves garlic
- ½ red onion
- ½ knob of large ginger
- ½ bunch coriander
- 5 spring onions
- ¼ cup soy sauce (or Tamari)
Whole Baked Snapper with Chilli, Garlic & Spring Onions: Method
- Preheat the oven to 200 degrees celsius.
- Finely slice the red chilli, red onion, garlic and spring onions. Use a teaspoon to peel the skin of the ginger, then finely slice.
- Place the snapper on a foil lined tray and place half the chilli, ginger and a couple of tablespoons of soy sauce inside the snapper.
- Spread the remaining ginger, garlic and red chilli on top of the snapper, pour over a couple more tablespoons of the soy sauce.
- Wrap the snapper in the foil and place in the oven for 15-20 minutes.
