The philosophy at Dovetail Social is “If we didn’t tell you it was gluten-free, you wouldn’t know it!”. Rejoice grew up in the Phillippines, with a family who loved to cook and to eat.
This passion continued through to her adult life, which soon included a coeliac husband, who Rejoice was inspired by. After making him a gluten-free apple pie that took him back to the flavours of the real deal, Rejoice became a qualified pastry chef and set about creating one of the best gluten-free cafes in Brisbane.
